Been looking for good baking flour alternatives and this is just perfect for my sourdough rye mix bread - I use half rye half spelt and the bread is yummy.
Loved the texture and quality of the flour.
As another commenter stated, the outside brown paper bag is a bit misleading. The flour is contain inside an inner plastic-like bag. I checked the packaging and it did not note what the inner plastic-like bag was made of.
I baked rusks with this flour to substitute wheat flour (my husband is wheat sensitive). The texture of the rusks was fantastic, and no allergic reaction that he usually finds with ordinary flour. Also not as dense as rye flour.
The flour was pretty good if overpriced, but sadly this product is not green. The brown paper packaging is misleading - it is very thin paper and the flour itself came in a plastic inner bag which did not seem recyclable.
